Refreshing Watermelon Mint Mojito Cocktail

Watermelon Mint Mojito is a bright, refreshing summer cocktail made with fresh watermelon juice, white rum and chilled club soda. It’s easy to scale up for a pitcher and takes under 10 minutes to assemble with just a few ingredients.

After the success of a Blueberry Mojito experiment, I wanted to try another fruity variation with watermelon and mint. The result is light, subtly sweet and perfectly suitable for warm afternoons, brunches or casual gatherings.

About Watermelon Mojito

This version of the Mojito uses fresh watermelon juice combined with mint, lime and a splash of white rum. The watermelon provides natural sweetness, lime adds a tangy balance and club soda gives a pleasant fizz. It’s a modern, colorful twist on the classic mojito that’s ideal for summer entertaining.

Make a non-alcoholic mocktail easily by omitting the white rum and topping with a little extra soda or a splash of sparkling water. You can also vary the fruit—strawberries, raspberries, cucumber or cherries pair nicely with mint and watermelon.

Ingredients

Watermelon – Use a ripe, juicy watermelon for the best flavor. If you prefer convenience, buy pre-cut ripe watermelon.

Mint leaves – Fresh mint is essential for aroma and flavor. If you want a different herb note, try basil in place of mint.

Sugar – Adjust sugar to taste. If your watermelon is very sweet you may not need any. Sugar-free alternatives like stevia or monk fruit work too, and honey, maple syrup or agave are good natural substitutes. Simple syrup dissolves easily and is often used in cocktails.

Lime juice – Freshly squeezed lime juice brightens the drink; lemon can be substituted if necessary.

White rum – Light rum is traditional for mojitos. You can substitute vodka or tequila if you prefer a different spirit, or omit entirely for a mocktail.

Club soda – Chilled club soda adds sparkle; sparkling water works as well. Avoid very sweet sodas unless you reduce added sugar.

Garnish with a mint sprig, lime wedge or a thin watermelon slice for a pretty finish.

How To Make Watermelon And Mint Mojito

Preparation

Peel and cube about 1 lb (500 g) watermelon to yield roughly 300 g of cubed melon. Chill the cubes for a few hours if possible for a colder, brighter juice.

Place the chilled watermelon cubes in a large blender or food processor. Blend until smooth. A few seeds are fine since you will strain the juice to achieve a clear, smooth base.

Strain the blended watermelon through a fine-mesh strainer into a bowl or pitcher. Press with the back of a spoon to extract as much juice as possible and discard the pulp. Straining yields a cleaner, more elegant drink.

Make The Cocktail

In a large pitcher, add ¼ cup packed fresh mint leaves and gently muddle them with a muddler or the end of a wooden spoon to release their oils.

Stir in 4 tablespoons granulated sugar (or your preferred sweetener) and ½ cup freshly squeezed lime juice until the sugar dissolves. Add 8 fl oz (1 cup) white rum and the strained watermelon juice, then mix well.

Prepare tall glasses (the recipe yields about 4 servings). To each glass add 2–3 ice cubes, 2 lime slices and 2–3 mint leaves. Fill each glass halfway with the watermelon mixture, then top with chilled club soda. Garnish with a small watermelon wedge and mint sprig and serve immediately.
