  • 1 pound (16 oz) vegan beef (such as Beyond Beef)
  • 2 cups white wine, vegan
  • 2 cups vegetable broth
  • 1 can (14 oz) tomato sauce (tomato puree)
  • 1 can (14 oz) crushed tomatoes
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups vegan heavy cream (e.g., Country Crock Plant Cream)
  • 1/2 cup vegan Parmesan (e.g., Violife)
  • 8 ounces cooked pasta
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil over medium-high heat in a large pot.
  2. Add the onion, carrots, celery, and garlic. Sauté, reducing heat as needed, until the onions are translucent — about 3–4 minutes.
