When Chef Gregory Gourdet opened Kann in 2022, it was one of Portland’s most anticipated debuts. Fresh off national recognition from television and the restaurant world, Gourdet brought a refined expression of Haitian cuisine to the city.

Early on, reservations were hard to come by as food lovers eagerly watched release dates. Social media attention helped cement its early reputation, and while initial hype settled over time, Kann has maintained a strong following. Four years in, it continues to draw locals and visitors for good reason.

Step inside Kann and the intent is clear: Haitian cooking is central and treated with care. The dining room feels bright and spacious, centered around an open kitchen with a prominent wood-fired hearth. The atmosphere leans toward an elevated dinner-party energy—polished but not formal.

Warm wood tones, soft lighting, and a lively but unobtrusive soundtrack keep the room inviting rather than quiet and solemn. Service is attentive and efficient, allowing the evening to flow without feeling rushed.

Overall, hospitality at Kann is genuine and welcoming; it’s easy to feel at home while still enjoying a refined meal.

A fully dairy-free and gluten-free menu

Led by Chef de Cuisine Erika Claassen, the menu at Kann is sharing-friendly. Most items are suited to pass around, so plan to come with an appetite and a willingness to divide plates.

Spice levels tend to be mild to medium, with a few dishes leaning toward the spicier side. Servers will typically ask about spice preferences; feel free to ask about any dish if you’re unsure.

One notable feature is that every menu item is dairy-free and gluten-free. For diners with milk allergies or gluten sensitivities, this breadth of options is a major convenience and a relief.

For our recent dinner, we chose one starter, two mains, and a dessert to share.

Starter dish: Griyo

A highly recommended starter is the griyo, currently one of Kann’s most popular dishes. It features twice-cooked pork served with avocado, bannan peze (twice-fried green plantains, similar to tostones), and pikliz (pickled cabbage slaw).

We enjoyed the griyo: the pork was flavorful and the bannan peze provided a great textural contrast. The preparation is not spicy, making it approachable for most palates.

Main course: Head On Prawns

For my main I chose the Head On Prawns. They arrive with diced pineapple, an African pepper sauce (mild), and lime. The prawns were cooked perfectly and offered a balanced sweet-savory-tangy flavor. This dish works well for sharing, though I admit I wanted them all to myself.

Main course: Steelhead

Alain considered the Steelhead and the Pork Coppa for his main choice and settled on the Steelhead. It was a generous portion, with crisp, seasoned skin and tender, flavorful flesh. The fish was served with confit potatoes, a pikliz remoulade, and a ginger relish that complemented the dish well.

Don’t skip dessert at Kann!

I usually skip dessert when dining out because many restaurants offer limited dairy-free options, but Kann’s dessert selection is generous. On our visit we selected the Passionfruit Chiboust: a dairy-free pastry cream with toasted ginger, salted coconut sauce, and a scoop of dairy-free rum ice cream. It was an excellent finish to the meal.

Kann offers a nightly sommelier wine-by-the-glass special alongside a thoughtfully curated wine list. During our visit we enjoyed a 2023 Chenin Blanc that paired nicely with our dishes, and we later purchased a bottle for home from a local wine shop. The restaurant also features a strong zero-proof cocktail program; mocktails are creative and treated with the same care as their alcoholic counterparts.

Entering its fourth year, Kann still stands out as one of Portland’s noteworthy dining rooms. As a frequent traveler and regular restaurant guest, I’ve found it increasingly rare to encounter consistent excellence in both food and service; Kann delivers in both areas.

This isn’t an everyday-budget restaurant for most diners, but it’s well suited for special occasions—birthdays, anniversaries, client dinners, or nights out with friends. The mood is lively and convivial, rather than hushed and overly formal, so it’s not the ideal choice for an intimate, quiet date night.

Kann continues to offer a vibrant dining experience while maintaining high standards in cuisine and hospitality.

Kann pricing: On our visit we paid for one starter, two mains, one dessert, and one bottle of wine. Expect higher-than-average prices compared with many Portland restaurants, but also a higher level of ingredients and service.
