  • 2 tablespoons maple syrup
  • 1–2 drops pure peppermint oil (or to taste)
  • For the Carob Drizzle:
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1.5 teaspoons carob powder
  • Pinch of sea salt
  • Optional: fresh mint for garnish
Instructions
  1. In a small saucepan over medium heat, bring the coconut milk to a gentle simmer. Whisk in collagen (if using), carob powder, honey, and a pinch of sea salt. Remove from heat.
  2. Add the peppermint tea bags and steep for 8–10 minutes, or until the peppermint flavor reaches your preference. Remove and discard the tea bags.
  3. While the tea steeps, chill and whip the coconut cream in a mixer with maple syrup and peppermint oil until light and fluffy. Store in the fridge until ready to top the drinks.
  4. For the carob drizzle, combine melted coconut oil and maple syrup, then whisk in carob powder and a pinch of salt until glossy and slightly thickened. Keep warm or reheat gently before serving.
  5. Pour the hot peppermint carob cocoa into mugs, top with peppermint coconut whipped cream, and drizzle with the carob sauce. Garnish with fresh mint if desired.
Notes
