Whole-Grain Raspberry Oat Breakfast Bars Recipe

It’s time for February’s #TheRecipeRedux and this month’s theme is Break Out of Breakfast Boredom. For the past five years breakfast has been my most consistent meal—usually yogurt, Ezekiel bread, oatmeal, or scrambled eggs. To mix things up for this challenge, I created a portable, whole-grain breakfast bar topped with tart raspberries. These bars pair a sturdy oat-and-wheat crust with a bright fruit layer and are easy to take on busy mornings or enjoy with tea on a relaxed weekend.

The recipe below uses raspberries, which tend to be slightly tart, as no additional sugar is added to the fruit layer. Blueberries, blackberries, or a mixture of berries work well too if you prefer a sweeter topping. The base is made from whole wheat flour, oats and a touch of toasted coconut for texture and flavor.

Whole-Grain Raspberry Oat Breakfast Bars

Ingredients

  • ½ cup shredded coconut, lightly toasted
  • 1½ cups whole wheat flour
  • 1 cup old-fashioned oats
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • 1 large egg
  • ⅓ cup butter, melted
  • 2 tablespoons milk
  • 6 oz. raspberries (fresh or thawed from frozen)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9 x 9 inch baking pan with aluminum foil and spray lightly with non-stick spray or grease the foil.
  2. Spread the shredded coconut on a foil-lined baking sheet and toast in the oven for 3–5 minutes, watching closely so it doesn’t burn. Remove and set aside to cool.
  3. In a medium bowl combine the toasted coconut, whole wheat flour, oats, salt, and brown sugar. In a separate small bowl whisk together the egg, melted butter, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until a cohesive dough forms. Reserve about ¾ cup of the dough for the topping.
  5. Press the remaining dough evenly into the prepared baking pan to form the crust.
  6. Lightly mash the raspberries in a small bowl with a fork to release juices, then spread them evenly over the pressed crust. Crumble the reserved dough over the raspberry layer to form a streusel-like topping.
  7. Bake for 25–30 minutes, or until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely in the pan before cutting into bars.

Notes and Tips

These bars are intentionally not overly sweet in the fruit layer; the brown sugar in the crust balances the tartness of the raspberries. For a sweeter filling, stir a tablespoon or two of honey or maple syrup into the mashed raspberries before spreading.

Variations

Switch the fruit to blueberries, blackberries, chopped strawberries, or a mixed-berry blend. You can also add a sprinkle of cinnamon or a teaspoon of vanilla to the dough for a different flavor profile. For added protein, mix a couple tablespoons of chia seeds or ground flaxseed into the dry ingredients.

Storage

Store cooled bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to one week. Bars freeze well: wrap individually or store in an airtight container for up to 3 months. Thaw at room temperature and warm briefly in a low oven or microwave if desired.

Enjoy these breakfast bars warm or at room temperature. They pair nicely with coffee, tea, or Greek yogurt. Cut into larger squares for a more filling snack or smaller pieces to serve alongside fruit and yogurt for a balanced breakfast spread.
