I grew up loving chicken nuggets, and while I no longer eat chicken, I still enjoy the familiar comfort of a nugget. These chickpea nuggets reproduce that satisfying texture and are easy to prepare with pantry staples. Making them at home lets you control the seasoning and keeps the process fun and straightforward.

Although store-bought meatless nuggets are available, homemade chickpea nuggets are fresher and customizable. They work well for family dinners, packed lunches, or as an appetizer for guests. The gentle flavor of chickpeas takes on spices and breadcrumbs beautifully, producing nuggets that crisp up in the oven.

How to make chickpea nuggets

Start by draining and rinsing canned chickpeas and adding them to a food processor. You do not need to reserve any canning liquid. Pulse the chickpeas until they become flaky and mostly broken down—this texture makes the dough easier to form into nugget shapes.

Transfer the processed chickpeas to a large bowl and add the egg, oat flour, breadcrumbs, and spices. Use your hands to combine everything until you have a cohesive, slightly sticky mixture that holds together but does not cling excessively to your hands. Toasting the breadcrumbs briefly in the oven adds extra crunch and toasty flavor before coating the nuggets.

Form the mixture into nugget shapes by hand, then press each side into the toasted breadcrumbs to coat. Place the coated nuggets on a parchment-lined baking sheet, sprinkle any remaining breadcrumbs on top, and bake until they reach your preferred level of crispiness. Serve hot with a dipping sauce of your choice.

Baking produces a golden exterior while keeping the interior tender. These nuggets are versatile: enjoy them on their own, in a sandwich, or alongside fries and a salad for a complete meal.

A few notes about vegetarian chicken nuggets

Chickpeas are the main ingredient and the source of the nuggets’ texture and mild nutty flavor. If you are not a fan of chickpeas, these may not be the right choice for you; however, if you enjoy falafel or mashed chickpea dishes, you will likely appreciate these nuggets.

Sauces elevate the experience—chickpea nuggets are an ideal vehicle for dips. Try classic options like barbecue sauce, honey mustard, or ranch, or use a bold homemade sauce to introduce contrast. The nuggets themselves are relatively neutral, so the dipping sauce is where you can add brightness, sweetness, or spice.

How to make these chickpea nuggets vegan

This recipe calls for an egg to help bind the mixture. To make the nuggets vegan, substitute the egg with a suitable egg replacer or a flax or chia “egg” (ground flax or chia seed mixed with water), which should perform well in binding the dough. The rest of the ingredients are dairy-free.

These nuggets make a kid-friendly option and are great for meal prep. Store cooked nuggets in an airtight container in the refrigerator and reheat until warmed through—an oven or air fryer helps keep them crisp. They also freeze well for longer storage; thaw fully before reheating.

Beyond dipping, use these nuggets to build sandwiches or wraps with fresh greens, pickles, and your preferred sauce. They pair well with side dishes like roasted vegetables, fries, or a simple slaw. For added flavor, adjust the seasoning—smoked paprika, a pinch of cayenne, or extra garlic powder can change the profile to suit your taste.

If you enjoy experimenting, swap the oat flour for another gluten-free flour or use different breadcrumbs for varied texture. Toasting the breadcrumbs adds depth, but you can skip that step if pressed for time; the nuggets will still be tasty.
