Ingredients

For the pumpkin, kale and polenta:

  • 250 grams (about 1½ cups) polenta
  • 1 L (about 4½ cups) water
  • 50 grams (about ½ cup) grated Parmesan (optional)
  • ½ small pumpkin, sliced
  • 1 small red chili pepper, chopped
  • 4 sprigs fresh thyme, leaves removed
  • Vegetable oil (for frying)
  • 1 clove garlic, chopped
  • 200 grams (about 7 oz) curly kale, chopped, veins removed
  • ⅓ leek, sliced
  • Salt and black pepper, to taste
  • 120 grams (about 4 oz) mozzarella, sliced (optional)

For the dressing:

  • 5 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon Demerara sugar (optional)
  • 2 tablespoons freshly chopped basil
  • Salt and black pepper, to taste
  • Pomegranate seeds to serve (about 4 tablespoons)

Instructions

  1. Bring the water and a tablespoon of salt to a boil in a medium pot. Gradually whisk in the polenta, cover, reduce the heat to low, and cook for about 10 minutes, stirring frequently so it doesn’t stick. Remove from the heat, stir in the Parmesan if using, cover, and let it rest for 15 minutes so it becomes creamy.
  2. While the polenta cooks, slice the pumpkin. Heat a splash of vegetable oil in a large pan or wok over medium-high heat. Add the pumpkin and sauté until tender, about 8 minutes. In the last couple of minutes, add the chopped chili and thyme leaves so their aroma infuses the pumpkin. Remove the pumpkin to a plate and keep warm.
  3. Add a little more oil to the pan, then add the chopped garlic and kale. Season with a pinch of salt and black pepper and cook, stirring, until the kale is tender, about 4 minutes. Transfer the kale to the plate with the pumpkin.
  4. In the same pan, sauté the sliced leek until soft and lightly golden, about 4 minutes.
  5. Prepare the dressing by whisking together olive oil, balsamic vinegar, lemon juice, sugar (if using), chopped basil, and a pinch of salt and pepper.
  6. To serve, spoon creamy polenta onto two plates, top with pumpkin, kale, and sautéed leek. Add slices of mozzarella if you like. Drizzle with the balsamic-basil dressing and finish with pomegranate seeds for a burst of color and brightness. Enjoy immediately.
