On a recent visit to a favorite spot along California’s Big Sur coast, I tried a simple three bean salad as a restaurant side and was reminded how satisfying this old-school dish can be. This version follows that straightforward tradition while keeping the dressing bright and fresh. It’s an excellent recipe to make ahead—the flavors mellow as the salad rests and the beans soak up the vinaigrette.

3 Bean Salad Recipe Snapshot

  • Fast and easy — Ready in minutes, with most of the work being blanching the green beans.
  • Healthy — High in fiber and plant-based protein, a nutritious, filling side.
  • Versatile — Pairs well with grilled meats, roasted chicken, sandwiches, or as a topping for greens.
  • Adaptable — Easily turn it into a 5-bean salad or add vegetables, herbs, or cheese.

Choose tender fresh green beans when possible; if not available, frozen whole green beans are a reasonable substitute. Canned beans keep this recipe fast—just rinse and drain them well before combining with the dressing.

Ingredients You’ll Need

Three types of beans create a pleasing mix of color, texture, and flavor. The dressing is a simple French-style vinaigrette with Dijon for balance and a little garlic if you like.

Bean Salad

  • Kidney beans — Use canned red kidney beans (light or dark). Low-sodium or no-salt-added cans let you control the salt.
  • Garbanzo beans — Also called chickpeas; rinse and drain well.
  • Green beans — Haricot vert (slender French beans) work beautifully. If unavailable, use regular fresh green beans or frozen whole green beans.

French Vinaigrette

  • Oil — Extra virgin olive oil for flavor and mouthfeel.
  • Vinegar — Red wine vinegar is classic; white wine or apple cider vinegar are fine alternatives.
  • Mustard — Dijon mustard helps emulsify the dressing and adds a gentle tang.

See the recipe card below for exact measurements and full ingredient list.

Chef’s tip on kidney beans: Light red kidney beans tend to be slightly softer than dark red, but both work well in salads. Canned beans are already cooked—never eat raw kidney beans, as they contain natural toxins before cooking.

Substitutions and Variations

This three bean salad is a great base for experimentation.

  • Make it a 5-bean salad — Add cannellini beans, black beans, Great Northern, navy, or lima beans.
  • Change the dressing — Swap in an Italian vinaigrette or a squeeze of fresh lemon for brightness.
  • Add fresh herbs — Parsley, chives, mint, or thyme add fresh aromatic notes; mint pairs particularly well.
  • Add vegetables — Try corn, chopped celery, finely diced red onion or shallot, or diced bell pepper for extra texture and color.
  • Add cheese — Crumbled feta brings salty, tangy contrast.

How to Make French Vinaigrette

Make a simple vinaigrette by whisking extra virgin olive oil with red wine vinegar, a bit of Dijon mustard, minced garlic or garlic paste, and a pinch of sea salt and black pepper. Taste and adjust acidity or salt as needed. This dressing is bright and tangy, perfect for bean salads and also useful on salads throughout the week.

Chef’s tip for garlic: Mince garlic very finely or smash it into a paste to distribute flavor without large raw bites. A tiny amount goes a long way in dressings.

Serving Suggestions

Serve this three bean salad at room temperature for fullest flavor, or chilled if you prefer. It’s excellent next to grilled meats, roast chicken, or a cup of soup, and it adds substance when spooned over mixed salad greens. For a packed lunch or mason-jar salad, place a scoop of bean salad on the bottom of a jar, add chopped tomatoes and greens, and keep vinaigrette separate until serving.

Meal Prep the Salad

Portion the salad into airtight containers for up to five days of refrigerated storage. Store undressed if possible; add dressing just before serving or a few hours ahead to allow the flavors to develop. Additions like olives, feta, chopped bell pepper, celery, or fresh herbs brighten the salad and make it more substantial.

Storage

Store the three bean salad undressed in the refrigerator for 4–5 days. Dress just before serving for the best texture, or dress a few hours in advance to let flavors meld. Be sure containers are airtight to preserve freshness.
