No-Cook Taco Salad with Tortilla Bowls

Ingredients
Tortilla bowls
- 4 flour tortillas for burritos (from an 11-oz package) or 4 pre-shaped soft flour tortillas
Taco salad
- Rotisserie chicken, shredded
- 1 avocado, peeled, pitted and diced
- 1 red onion, diced
- 4 ounces queso fresco, crumbled
- 1 (15 oz) can black beans, rinsed and drained
- 1 (2.25 oz) can sliced black olives
- 2 tomatoes, chopped
- 1 jalapeño, sliced (optional)
- 1 bell pepper, cored and chopped
- Lettuce, chopped
- 1 (10-ounce) can mild enchilada sauce
Instructions
- Baked tortilla salad bowls: Preheat the oven to 400°F. If tortillas are stiff, wrap them in a slightly damp towel and microwave 20–30 seconds until pliable.
- Mold tortillas into tortilla bowl molds or over an inverted muffin tin and bake 5–7 minutes, until evenly browned and crisp.
- Remove the baked tortillas from the molds and place them upside down on a cooling rack. Cool completely so they hold their shape.
- Assemble and serve: Arrange shredded rotisserie chicken, diced avocado, onion, crumbled queso fresco, beans, olives, tomatoes, jalapeño, bell pepper, and lettuce in bowls or on a platter. Spoon the toppings into the tortilla bowls and drizzle with mild enchilada sauce. Serve immediately so the bowls stay crisp.
