Dairy-Free Sticky Toffee Pudding Cake Recipe

Three incredibly moist, date-filled cake layers soaked in warm toffee sauce and finished with a silky cracked black pepper buttercream—this is the dairy-free Sticky Toffee Pudding Cake. I simplified the process by using a doctored cake mix so you can achieve those classic sticky-toffee flavors without spending hours from scratch. Gather your dates and a box of yellow cake mix and let’s make something memorable.

What Is a Sticky Toffee Pudding Cake?

Sticky toffee pudding traditionally refers to a moist date sponge drenched in toffee sauce, often served with custard or cream. This cake adapts those flavors into a layered format: a date-enriched sponge made from a doctored yellow cake mix, topped and filled with a rich toffee sauce and finished with a lightly spiced buttercream. It captures the comforting sweetness of the classic dessert while being easier and quicker to make.

Cake Mixes

A doctored cake mix is one of the best kitchen shortcuts: it keeps baking simple but still delivers great texture and flavor. For this cake, a yellow (sometimes labeled golden) cake mix is ideal. Adding a few pantry ingredients—egg whites, dairy-free yogurt, oil and dairy-free milk—transforms the boxed mix into a tender, moist batter that pairs perfectly with the caramel-like notes from the dates and toffee sauce.

How to Doctor a Cake Mix

The process is straightforward. Start by preparing the dates: simmer them until soft, then mash with a little baking soda to break them down and add moisture. Mix the boxed cake mix with the wet ingredients until just combined, then fold in the mashed dates gently so you keep the batter light. Divide between pans and bake until a toothpick shows a few moist crumbs. The result is a quick, flavorful sponge that tastes like it took much more effort.

Because the cake is made from a mix, assembly and finishing become the fun parts: soak each layer lightly with warmed toffee, stack with buttercream between the layers, and finish by pouring extra sauce over the top for dramatic, sticky appeal.

Cracked Black Pepper Buttercream

The cracked black pepper buttercream offers a subtle savory counterpoint to the cake’s sweetness. The flavor is gentle—an aromatic hint of pepper that lifts the toffee and date notes without overwhelming them. If you prefer a more traditional finish, simply omit the black pepper and make a classic vanilla buttercream instead.

Other Easy Doctored Cake Ideas

If you enjoy working with cake mixes, try other variations using the same doctoring method: lemon cake with yogurt and zest, a spiced eggnog bundt for holidays, a grape-flavored layer cake, or an apple bundt that adapts easily to gluten-free mixes. These recipes follow the same principle—start with a boxed mix, add key wet ingredients, and fold in flavor components.

  • 2/3 cup dairy-free milk, room temperature
  • 4 egg whites, room temperature
  • 1/3 cup dairy-free yogurt, room temperature
  • 1/3 cup vegetable oil
  • 1/3 cup fancy molasses
  • 1 teaspoon vanilla extract

Toffee Sauce

  • 1 cup dairy-free salted butter
  • 1 cup brown sugar
  • 2/3 cup dairy-free milk
  • 3 tablespoons fancy molasses
  • 1 teaspoon vanilla extract
  • 1 teaspoon fine sea salt

Black Pepper Buttercream

  • 2 cups dairy-free salted butter, room temperature
  • 6 cups icing sugar
  • 1 teaspoon fine sea salt
  • 2 teaspoons ground black pepper (optional – adjust to taste)
  • 1 tablespoon vanilla extract
  • Optional: toffee bits for decoration

Instructions

Sticky Toffee Pudding Cake

  1. In a medium pot combine the pitted dates and water. Bring to a boil over medium heat and simmer for about 3 minutes, then remove from heat.
  2. Sprinkle baking soda over the date mixture and mash the dates with a potato masher or fork until broken down. Set aside to cool slightly.
  3. Preheat the oven to 350°F (175°C). Prepare three 6-inch round pans with non-stick spray and parchment paper.
  4. In a large bowl or stand mixer, add the yellow cake mix and whisk briefly to remove lumps. Add dairy-free milk, egg whites, dairy-free yogurt, vegetable oil, molasses, and vanilla. Mix until combined—do not overmix.
  5. Gently fold the mashed dates into the cake batter until evenly dispersed.
  6. Divide the batter between the prepared pans and bake 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool the cakes in the pans for 10 minutes, then invert onto a rack to cool completely.

Toffee Sauce

  1. Combine all toffee sauce ingredients in a medium pot and bring to a boil over medium-high heat.
  2. Reduce heat to medium and simmer 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
  3. Remove from heat and cool to room temperature before using. If refrigerated, warm gently and whisk to recombine before serving.

Black Pepper Buttercream

  1. Cream the dairy-free butter on high speed in a stand mixer until light and fluffy, about 5–10 minutes.
  2. On low speed, add icing sugar, salt, ground black pepper (if using), and vanilla, mixing until incorporated.
  3. Increase to high speed and whip for about 5 minutes until very smooth and creamy, scraping the bowl as needed.

Cake Assembly

  1. Level each cake layer. Poke holes with a skewer and brush or spoon about 1/4 cup of toffee sauce over each layer, allowing it to soak in.
  2. Place one layer on a cake board or plate and spread about 1 1/2 cups of buttercream on top. Add the next layer and repeat.
  3. Apply a thin crumb coat of buttercream over the cake and chill for 20 minutes.
  4. Finish with a final layer of buttercream, smoothing the sides as desired. Pour additional toffee sauce over the top and garnish with toffee bits if using.
  5. Slice and serve. Enjoy the warm, sticky, and slightly peppery balance of this cake.

Equipment

Basic tools used for this recipe include a wire whisk, three 6-inch cake pans, an angled icing spatula, a cake leveler, and a stand mixer (or a sturdy hand mixer).

Notes

If the black pepper buttercream feels too adventurous, omit the pepper and use vanilla buttercream instead. The toffee sauce can be made a day ahead; if it separates in the refrigerator, warm and whisk to recombine.
