To be honest, winter squash was never my first choice in the past. Over the years our family has moved toward eating more seasonally and locally, and I’ve learned to appreciate how versatile and satisfying squash can be. This honeynut squash soup is one of those recipes that changed my mind.

Honeynut squash is small, sweet, and wonderfully nutty. Its richer flavor makes it ideal for a blended soup that’s both creamy and bright. This version uses a short ingredient list and slow simmering to develop depth of flavor, and it freezes very well for busy weeknights.

What is a Honeynut Squash?

Honeynut squash is a relatively new hybrid, combining qualities of butternut and buttercup squashes. It’s generally smaller than a butternut and deeper in color, which concentrates its sweet, nutty flavor. Because of that concentrated sweetness and rich texture, honeynut squash is especially satisfying in soups and purees.

Soup Ingredients

I prefer soups that develop flavor slowly with simple ingredients rather than rushing to a quick result. This recipe relies on a few good pantry items and fresh produce that highlight the squash’s natural sweetness while keeping the overall flavor balanced.

Here are the ingredients you’ll need to make creamy honeynut squash soup:

  • Honeynut squash – Use 2 that feel heavy for their size and are firm. If you can’t find honeynuts, one medium butternut squash is an acceptable substitute.
  • Yellow onion – Any sweet or yellow onion will work; they add a mellow base flavor when gently sweated.
  • Roasted garlic – Roasted garlic adds sweetness and depth. If you don’t have roasted garlic on hand, use about 4 cloves of minced garlic as a substitute.
  • Fresh thyme – A small bundle of thyme sprigs infuses the broth; rosemary can be used if you prefer.
  • Granny Smith apple – Use a tart apple to add brightness and balance the squash’s sweetness. Avoid very sweet apples or the soup may become overly sweet.
  • Chicken or vegetable broth – Use vegetable broth to keep the soup vegan, or chicken broth if you prefer the added savory flavor.
  • Canned coconut milk – Full-fat canned coconut milk gives the soup a silky richness without dairy. Use the canned product, not carton beverage coconut milk.
  • Salt – Essential for balancing flavors. Coarse kosher salt works well; add to taste.
  • Oil – A tablespoon of olive, canola, grapeseed, or coconut oil to gently cook the onions before adding liquids.

How to Make Honeynut Squash Soup

Good soup benefits from time. Rather than rushing, allow the pot to simmer so the ingredients meld and develop a deeper, more rounded flavor. Below are the key steps and tips I use every time I make this soup.

  • Start by gently sweating the diced onions in oil over low heat. Stir occasionally so they soften without browning.
  • Add the peeled and seeded diced squash to the pot, then the diced apple and roasted garlic. Stir to combine so everything begins to soften and mingle with the onions.
  • Season with about 1/2 teaspoon of salt, add the broth, canned coconut milk, and a bundled bunch of thyme for easy removal later.
  • Bring the mixture to a simmer, then cover and let it cook gently for 60–90 minutes. The longer simmer gives the most flavor—I aim for 90 minutes when I have the time.
  • Remove the thyme bundle, then puree the soup until smooth. Use a blender in batches or an immersion blender in the pot. Take care when handling hot liquids; leave some room in the blender vessel to prevent splashing.
  • Taste and adjust seasoning, adding more salt if needed. If you want an extra-silky texture, pass the soup through a fine sieve, though it’s usually creamy enough without this step.
honeynut squash soup before blending

I often blend this soup in a high-quality blender that can handle hot liquids. If you use a countertop blender, fill it no more than two-thirds full and hold the lid with a towel for safety. After blending, always taste and add a final pinch of salt to bring the flavors into balance before serving.

FAQs

Below are a few common questions about making and storing honeynut squash soup.

How do I freeze squash soup?

Soups made without animal dairy freeze well. Store cooled soup in mason jars or freezer-safe containers for up to three months without a major loss of quality. Leave an inch or two of headspace so the container has room to expand as the soup freezes.

Is honeynut squash soup healthy?

Yes—honeynut squash is nutrient-rich, and this recipe keeps ingredients simple and whole. Coconut milk adds richness and contains saturated fat, so use it in moderation. Overall, this soup makes a nutritious, plant-forward option, especially when paired with a balanced meal.

Can I double or triple the recipe?

Absolutely. The recipe scales well and makes a great batch to freeze for future meals.

Ingredients

  • 2 honeynut squashes
  • 1 large yellow onion
  • 7 cloves roasted garlic (or 4 cloves minced)
  • 4 sprigs fresh thyme
  • 1 medium Granny Smith apple
  • 2 cups vegetable or chicken broth
  • 1 can coconut milk
  • 3/4 teaspoon salt, divided
  • 1 tablespoon oil

Instructions

  1. Heat the oil in a large pot over low heat. Dice the onion and add it to the pot to sweat, stirring occasionally.
  2. Peel, seed, and dice the squash, then add it to the onions.
  3. Dice the apple and add it with the garlic. Stir and cook for 2–3 minutes.
  4. Add 1/2 teaspoon of salt, the broth, coconut milk, and the bundled thyme. Bring to a simmer.
  5. Cover and cook gently for 60–90 minutes, until the squash and apple are very tender.
  6. Remove the thyme, puree the soup until smooth, taste, and add additional salt if needed.

Notes

If you don’t have roasted garlic, substitute 4 cloves of finely minced garlic.

You can use chicken broth if that’s what you have on hand.

Technically the soup can be pureed once the squash and apples are very soft, but a full 90 minutes of simmering gives the best flavor development.
