Oven-Roasted Turkey Breast with Pan Gravy

Ingredients

  • 1 whole turkey breast, 4 1/2 to 5 pounds, thawed if frozen
  • 1/2 cup (1 stick) butter, melted
  • 1/4 cup dry white wine or chicken broth
  • 2 tablespoons chopped fresh thyme leaves or 1 1/2 teaspoons dried thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 3 cloves garlic, finely chopped
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Preheat the oven to 325 degrees F (163 degrees C).
  2. Place the turkey breast skin side up on a rack in a large roasting pan. Insert an ovenproof meat thermometer into the thickest part of the breast, making sure the tip does not touch bone. Roast uncovered for 1 hour.
  3. While the turkey roasts, combine the melted butter, white wine or chicken broth, thyme, salt, paprika, and chopped garlic. After the first hour, brush the turkey with half of this butter mixture. Return it to the oven and roast 30 minutes more, then brush with the remaining butter mixture.
  4. Continue roasting until the meat thermometer registers 165°F (74°C) in the thickest part of the breast. Depending on the size of the breast, this may take about another hour; smaller breasts will require less time. Monitor the thermometer rather than relying solely on time for best results.
  5. When the turkey reaches the proper temperature, remove it from the oven and let it rest for 10 minutes. Resting makes carving easier and helps the juices redistribute for a moister result.
  6. While the turkey rests, make the pan gravy. Pour the pan drippings into a measuring cup and skim off excess fat. Add enough water to make 2 cups of liquid total. Bring the drippings to a boil in a 1-quart saucepan. Mix the cornstarch with 2 tablespoons cold water to form a smooth slurry, then whisk it into the boiling drippings. Boil and stir for 1 minute until the gravy thickens and becomes glossy. Adjust seasoning if needed.
  7. Slice the turkey breast and serve with the warm pan gravy. Enjoy!
