Menu Plan Monday: October 19, 2009

This week’s dinner plan is a varied mix of comfort food and simple experiments — a collection of easy recipes and crockpot-friendly meals to keep evenings interesting. Below is the weekly menu with brief notes on each dish, serving suggestions, and a short review of a new recipe I tried last week.

monday : butternut squash risotto. I’m finally making risotto for the first time. I’ve wanted to try it for ages, and this butternut squash version seemed like the perfect place to start. It’s my meatless meal for the week and should be creamy and comforting without being heavy. For a balanced plate, I plan to finish with a little Parmesan (or a sprinkle of toasted pumpkin seeds for extra texture) and a simple green salad on the side. Risotto is one of those dishes that rewards attention: stirring helps release the rice’s starches for a velvety finish, and adding hot stock gradually gives better texture. I’m curious to see how the family — especially the girl — will respond to the sweet, roasted squash folded into the rice.

tuesday : italian sausage soup. This is a favorite I discovered in a crockpot recipe book last fall. It combines Italian sausage, cheese-filled tortellini, cannellini beans and tomatoes for a hearty, satisfying soup. It’s one of those easy, make-ahead dinners that benefits from slow simmering so the flavors meld. I’ll brown the sausage before adding it to the pot, then let the crockpot do the rest; the tortellini goes in near the end so it doesn’t overcook. This soup is filling on its own, but I like serving it with crusty bread or a light side salad. I’ll try to add the recipe to my journal this week for anyone who wants to recreate it.

wednesday : leftovers. Leftovers night is a practical midweek pause: a chance to clear the fridge and enjoy second-day flavors, which are often deeper and more developed. Depending on what’s left from Monday and Tuesday, I may reheat portions of risotto or the Italian sausage soup, or combine elements for a fresh plate. Leftover strategy helps reduce waste and keeps busy weeknights simple.

thursday : mexican breakfast casserole. We’ve made this casserole before and it’s always a hit. It’s a savory, layered dish built with eggs, tortillas or bread, cheese, and Mexican-inspired seasonings and fillings—perfect for a “breakfast for dinner” night. This casserole is great for feeding a crowd or for making ahead and reheating. I like serving it with salsa, avocado, and a side of black beans for a full, satisfying meal that still feels a little indulgent.

friday : spaghetti. Spaghetti is a reliable favorite in our house and one of the girl’s top picks. Whether kept simple with a classic tomato sauce and grated cheese or dressed up with meatballs or sautéed vegetables, it’s an easy, comforting way to end the week. I’ll aim for a sauce that’s flavorful but not overly complicated, and prepare a side of steamed vegetables or a small salad to round out the meal.

pasta e fagioli soup. This was a real winner: hearty, flavorful and super easy to prepare. I did all the prep the night before and simply put everything in the crockpot the next morning, which made the day effortless. The family liked it a lot — the girl had three servings, which says everything about how kid-friendly and satisfying it was. My only tweak for next time would be to add more pasta, since that was the most popular component at the table; the pasta tended to disappear first, and the recipe makes a generous batch. Overall, it’s a dependable, comforting soup to add to a regular rotation of easy weeknight meals.
