- 1/2 cup molasses
- 1 teaspoon vanilla extract

- 2-3 tablespoons unsweetened coconut milk
- 1/2 teaspoon ground ginger
- 1/2 teaspoon pure vanilla extract
- Preheat the oven to 350°F (175°C). Prepare a mini loaf pan by spraying with cooking spray or lining the pans with parchment paper.
- In a large bowl, whisk together the gluten-free flour blend, baking powder, baking soda, cinnamon, ground ginger, and salt. Set aside.
- In a separate bowl, combine the coconut milk, brown sugar, applesauce, pumpkin puree, oil, molasses, and vanilla. Mix until smooth.

For a lighter crumb, be careful not to overmix the batter once the wet and dry ingredients are combined. If you prefer a richer flavor, use dark molasses; for a milder molasses taste, use light molasses. These loaves freeze well: wrap tightly and freeze for up to 2 months. Thaw overnight in the refrigerator or at room temperature, then refresh in a warm oven for a few minutes if desired. To keep them moist at room temperature, store in an airtight container for several days.
