- 450 g Bacon, chopped (about 1 pound)
- 1 cup Fresh cream (double cream)
- 2 cups White cheddar cheese, grated

Instructions
- Cook the spaghetti according to the package directions in a large pot of boiling salted water. Drain when al dente and set aside in the pot.
- While the pasta cooks, heat the oil in a large skillet over medium heat. Sauté the chopped onions and green bell pepper until they soften and the onions begin to brown. Use a slotted spoon to transfer them to a bowl and keep aside.
- In the same skillet, add the sliced mushrooms. If needed, add a little more oil. Sauté until the mushrooms are soft and nicely browned. Remove them and set aside with the onions and pepper.
- Add the chopped bacon to the skillet and fry until it reaches your desired level of crispiness. When the bacon is cooked, return the onions, bell pepper and mushrooms to the pan. Pour in the fresh cream and gently heat until warmed through and combined with the bacon mixture.
- Return the drained spaghetti to the pasta pot. Pour the bacon, mushroom and cream mixture over the pasta and stir to combine. Add the grated cheddar in three batches, stirring well after each addition so the cheese melts evenly and creates a smooth, creamy sauce.
