Ingredients

Broccoli

  • 15 ml Olive Oil
  • 950 g Broccoli, trimmed
  • Salt & Pepper, to taste

Bechamel Sauce

  • 100 g Unsalted Butter, cubed
  • 50 g Plain Flour (all-purpose)
  • 880 ml Full Fat Milk
  • 120 g Cheddar Cheese, grated
  • 80 g Gruyère Cheese, grated
  • 2 g Nutmeg, grated
  • Extra Cheddar, grated (for the top)
  • Salt & Pepper, to taste

Method

Broccoli

  1. Preheat the oven to 200°C (390°F).
  2. Place the trimmed broccoli in a mixing bowl. Toss with the olive oil and season with salt and pepper so each floret is lightly coated.
  3. Spread the broccoli in a single layer in a large baking dish. Roast for about 18 minutes, turning once if needed, until the edges are lightly charred. Remove from the oven and reduce the temperature to 180°C (350°F).

Bechamel / Mornay Sauce

  1. While the broccoli roasts, melt the butter in a large saucepan over medium-high heat until it begins to bubble. Add the flour and stir constantly for about 1 minute to form a roux—this cooks out the raw flour taste.
  2. Pour in half of the milk and whisk vigorously until the mixture thickens, about one minute. Add the remaining milk and continue to whisk until the sauce is smooth and has thickened. Remove from the heat.
