Ingredients

- 60 g unsalted butter softened
- 110 g dark brown sugar
- 1 teaspoon ground cinnamon
- ¾ teaspoon ground ginger
- ½ teaspoon ground cardamom
- ½ teaspoon ground allspice
- ⅛ teaspoon black pepper
For the Bourbon Vanilla Bean Cream Cheese Icing:
- 55 g cream cheese softened
- 30 g unsalted butter softened
- 120 g powdered sugar
- 30 g milk
- 15 g bourbon
- ½ teaspoon vanilla bean paste

Make the vanilla bean brioche dough: In a stand mixer bowl or a large mixing bowl, combine the warm milk and yeast. Add the egg, melted butter, flour, salt, sugar, and vanilla bean paste. Mix just until the ingredients begin to come together, then let the mixture rest for 5 minutes to allow the flour to hydrate.
