The Crust

For convenience I used a store-bought 9″ graham cracker crust. Prepared crusts are widely available in the baking aisle and save time and cleanup. If you prefer to make your own crust from graham cracker crumbs and butter, press it into a 9-inch pie pan and chill in the freezer for about 20 minutes before filling to help it set up.

The Filling

The filling is cream cheese–based, made with softened cream cheese, granulated sugar, fresh lime juice, a touch of tequila, a bit of triple sec (orange liqueur), lime zest, and thawed Cool Whip. Cool Whip adds stability so the pie stays firm despite the liquid ingredients; it’s more stable than fresh whipped cream which can weep or deflate over time. If you’re serving kids or anyone avoiding alcohol, simply omit the tequila and triple sec and increase the lime juice slightly for the same tangy profile.

No-Bake Margarita Pie

This no-bake margarita pie is cool, creamy and packed with lime flavor. It’s an ideal option for summer parties, holidays, or any time you want a fun, boozy dessert (or alcohol-free version for kids).

Recipe Details

Prep Time: 10 minutes (plus chilling time) • Chill Time: at least 6 hours, preferably overnight • Servings: 8

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/3 cup lime juice (freshly squeezed recommended)
  • 2 Tbsp tequila (blanco or reposado)
  • 1 Tbsp triple sec (orange liqueur)
  • 2 tsp lime zest, plus extra for garnish
  • 8 oz Cool Whip, thawed
  • 1 prepared 9″ graham cracker crust

Instructions

  1. In a medium bowl, beat the softened cream cheese and granulated sugar with a handheld mixer until smooth and fluffy, about 1 minute.
  2. Add the lime juice, tequila and triple sec. Mix on low speed until just combined.
  3. Gently fold in the lime zest and thawed Cool Whip until no streaks of cream cheese remain and the filling is uniform in color and texture.
  4. Pour the filling into the prepared graham cracker crust and smooth the top with a spatula.
  5. Cover and refrigerate for at least 6 hours, preferably overnight, to allow the pie to set and the flavors to meld. Before serving, garnish with additional lime zest or thin lime slices.

Notes

If serving to anyone underage or avoiding alcohol, omit the tequila and triple sec and replace with additional lime juice or a splash of orange juice for the orange flavor. Freshly squeezed lime juice and fresh zest will give the brightest flavor, but bottled lime juice will work in a pinch.
