This ratatouille pasta combines eggplant, zucchini, fennel, onion, and tomatoes into a hearty, flavorful meatless meal. It’s straightforward to prepare and comes together quickly — a satisfying dinner that’s full of vegetables, herbs, and a gentle touch of heat. If you enjoy Provençal flavors, this dish is an easy way to bring them to the dinner table with pasta.

Traditional ratatouille is a French Provençal stew of summer vegetables. Here, those same vegetables—zucchini, eggplant, tomatoes, fennel, and onion—are cooked into a bright vegetable sauce and tossed with pasta for a more substantial main course. The roasted or sautéed vegetables give the sauce texture and depth, while fresh basil and a little Parmesan make the finished plate feel complete.
This recipe is ideal when you want a meatless option that still feels filling and vibrant. It works well for weeknight dinners, casual gatherings, or meal prep since the flavors often improve as the dish rests.
Ingredients for ratatouille pasta
- Onion and garlic – Classic aromatics that add savory depth and aroma.
- Fire-roasted diced tomatoes – Canned fire-roasted tomatoes give the sauce a smoky, robust base.
- Zucchini and eggplant – Traditional ratatouille vegetables: eggplant adds a meaty texture while zucchini contributes bright, fresh flavor.
- Fennel – A sweet, mildly anise-flavored vegetable that softens and sweetens when cooked.
- Oregano – Dried oregano adds earthy, herbal notes that pair well with tomatoes.
- Crushed red pepper flakes – A small amount gives the sauce a pleasant, warming kick.
- Pasta – Any sturdy pasta (penne, rigatoni, or spaghetti) works well to carry the sauce.
- Fresh basil and Parmesan – Optional finishing touches that brighten and round out the dish.

Adding protein to vegetable pasta
If you want to boost the protein without losing the meatless profile, choose a protein-enriched pasta made from lentils, chickpeas, or other legumes. These pastas are now widely available and blend easily with the sauce while adding extra protein and fiber.
If you prefer meat, shredded rotisserie chicken is an easy addition—stir it into the sauce at the end to warm through. Seafood lovers can add cooked shrimp for a quick and tasty variation. Alternatively, a sprinkle of toasted pine nuts or a scoop of ricotta can add both protein and richness while keeping the dish mostly plant-forward.
Working with fennel
Fennel has a crisp texture similar to celery when raw and a subtle anise-like flavor. When cooked, fennel softens and becomes gently sweet, adding complexity without an overwhelming licorice note. Trim the bulb, remove the tough outer layers if needed, and thinly slice the remainder so it blends into the sautéed vegetables.
If you’re new to fennel, start with a small amount and adjust to taste—its flavor is delicate and complements tomato-based sauces very well.

Storage and leftovers
Leftovers keep well. Store the cooled ratatouille pasta in an airtight container in the refrigerator for up to four days. To reheat, sprinkle a little water over the pasta or cover with a damp paper towel and microwave for one to two minutes, stirring halfway through to heat evenly. You can also reheat gently on the stovetop over low heat, adding a splash of reserved pasta water to revive the sauce.
This dish also freezes reasonably well without the fresh basil or Parmesan; freeze in portioned containers and thaw in the refrigerator before reheating.

Servings: 4 | Prep: 10 mins | Cook: 20 mins | Total: 30 mins
Ingredients
- 1 tablespoon olive oil
- 2 small zucchini, trimmed and cut into half-moons
- 1 small eggplant, chunked
- 1 small fennel bulb, trimmed and thinly sliced
- 1 small yellow onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 2 tablespoons tomato paste
- 1 pound (16 ounces) pasta of your choice
- 1/3 cup thinly sliced fresh basil leaves
- Grated Parmesan cheese, optional
Instructions
- Heat the olive oil in a large, high-sided 12-inch pan over medium-high heat.
- Add the zucchini, eggplant, fennel, and yellow onion. Sauté for about 10 minutes, until the zucchini begins to soften and the vegetables take on some color.
- Add the garlic, oregano, and crushed red pepper flakes. Cook, stirring, for about 1 minute until the garlic is fragrant.
- Stir in the diced tomatoes with their juice and the tomato paste. Reduce the heat to low and let the sauce simmer while you cook the pasta.
- Prepare the pasta according to package directions. Reserve 1 cup of the starchy pasta water before draining.
- Add the cooked pasta to the pan with the sauce and toss to combine. If the sauce is too thick, add a bit of the reserved pasta water to loosen it and help the sauce cling to the pasta.
- Stir in the fresh basil and adjust seasoning to taste. Serve with grated Parmesan if desired.
Notes
This pasta is not overly spicy; reduce the crushed red pepper flakes if you prefer a milder dish. Leftovers taste great reheated, and the dish is flexible for adding protein like shrimp, shredded chicken, or a protein-based pasta.
