How to make Baked Chicken Pesto Parmesan

Bread the chicken

  1. Preheat the oven to 450°F (230°C). Generously coat a large rimmed baking sheet with nonstick spray or line it with parchment.
  2. If needed, use a meat mallet to pound each chicken breast to about 1/4-inch thickness. Cut very large pieces in half so you have 6 to 8 portions.
  3. In a shallow dish combine 1 1/2 cups Italian seasoned panko, 2 teaspoons Italian seasoning, 1/2 teaspoon black pepper, and 1/4 cup grated Parmesan. In a separate dish whisk 1 egg with 1/2 cup milk and 1/4 teaspoon salt.
  4. Dip each chicken piece into the egg mixture, then press both sides into the breadcrumb mixture so the crumbs adhere. Transfer the breaded chicken to the prepared baking sheet.

Add toppings and bake

  1. Lightly spray the tops of the breaded chicken with nonstick spray and drizzle about 1 teaspoon olive oil over each piece to encourage browning. Bake for about 18–20 minutes, until edges are golden and the chicken feels firm.
  2. Remove the pan and spoon about 1 tablespoon marinara and 1 tablespoon pesto over each chicken piece. Top with shredded mozzarella and the remaining Parmesan.
  3. Return the pan to the oven for 4–6 minutes more, until the sauce is warmed and the cheese has melted. Garnish with fresh basil or parsley if desired and serve immediately.

Serve the chicken with cooked pasta tossed in the remaining marinara or pesto, a crisp salad, or roasted vegetables for a complete meal.

Notes

Thin-sliced chicken is important for even, quick cooking. If your breasts are thick, pound or slice them before breading. Use part-skim mozzarella for a lighter version, or whole-milk for a richer finish.
