- Crust:
- 2 cups graham cracker crumbs
- 2 tbsp sugar
- 1/3 cup butter, melted
- Filling:
- 2 packages (8 oz) low-fat cream cheese, room temperature
- 2/3 can (15 oz can) pumpkin puree
- 2 eggs
- 1 cup sugar
- 2 tbsp light sour cream
- 1 tbsp all-purpose flour
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- Preheat the oven to 350°F (175°C).
- Combine the graham cracker crumbs, 2 tablespoons sugar and melted butter in a bowl. Press the mixture firmly and evenly into the bottom of a greased 9-inch springform pan to form the crust.
- Add all remaining filling ingredients to a stand mixer or blender and blend until the mixture is completely smooth. Scrape down the sides as needed to ensure an even consistency.
- Pour the filling over the prepared crust and smooth the top. Place the springform pan on a baking sheet and transfer to the oven.
- Bake for about 50 minutes. When the time is up, turn off the oven, open the oven door slightly and let the cheesecake rest inside for 15 minutes to cool gently.
